Why is the episode called the Dragon and the Wolf?
The finale’s title is a nod to Jon Snow (wolf) and Daenerys Targaryen (dragon).

It is rumoured that Jon will finally learn who his biological parents are in this episode.

Jon grew up believing he was the illegitimate child of Eddard Stark and an unknown woman, but viewers learned last season that his mother was in fact Ned’s sister Lyanna.

It is now widely believed that Jon’s parents are Lyanna and Rhaegar Targaryan (Dany’s brother), making him the rightful king of Westeros.
Of course, if he is a Targaryen then it could scupper his blossoming romance with Daenerys, who would be his aunt.
